Black Bean and Rotel Salad
Black Bean and Rotel Salad

1          16 oz frozen corn, thawed
2          16 oz black beans, drained
1          8 oz Rotel tomatoes, undrained
1          4 oz green chiles (canned)
1          red pepper, coarsely chopped
12        black olives, quartered
2-3 T   olive oil
1 T       lemon juice (or lime juice)

To taste:
minced garlic     Fresh minced or jarred
salt/pepper          Master Salt Blend, Twisted Lime Salt, fresh cracked pepper
cilantro                 Fresh or dried
minced onion      I use dried minced as the flavor isn’t as over powering
avocado                If I have one on hand, chopped

Thaw corn in colander; drain black beans; mix in bowl with undrained Rotel tomatoes and green chiles.

Add in remaining ingredients to taste; chill for at least four (4) hours.

To serve, mix with torn salad greens.  Can also be used as a dip with tortilla chips.  Get creative, add cheese and a dollop of sour cream!
